Ingredients:
- 115 g margarine (refrigerated temperature)
- 25 g of powdered sugar
- 130 g all-purpose flour
- 0.5 teaspoon of vanilla extract
- a pinch of salt
- 50 g of chocolate
- 20 g of coconut shreds
- 20 g of pistachios
Preparation:
- Sift flour, powdered sugar and salt through a sieve into a bowl. Add margarine, cut into cubes.
- Combine it together with a hands, spatula, or electric mixer, until getting a crumbly mixture.
At this point you should form a ball out of it.
We need to be fast at this step, otherwise the margarine will start melting under warm hands and adding more flour to it will create a tough cookie. - Place a ball of dough into the fridge for at leat one hour.
- Roll the dough 0.5 centimeters thick.
- Use a cookie cutter, a glass or a knife to shape your cookies.
Place them in the preheated oven at 180 ⁰C for about 12-14 minutes. - Melt the chocolate in a double boiler and drizzle it over the cookies.
- Sprinkle half of the cookies with cocnut shreds and the other half with chopped pistachios.
Let the chocolate firm before serving.
