Making fermented foods has been an enjoyable experience. And sourdough is one of those foods you can do alot with. From pizza crust to biscuits there are many ways of preparing this fermented dough.
I show how to pan fry the dough in this video. It makes pancake shaped pieces once formed. I use butter to fry them in a pan and turn the dough pieces over once they firm up. It only takes a few minutes on each side to cook the dough and the butter gives them a savory flavor. I only feed my sourdough four and water but when I cook with it I add many things. I use left over olive juice, cheese, garlic, onion, turmeric, and pepper spices. And by adding a little flour and egg you can really stretch it while keeping that sourdough flavor. I really like the taste so in this video I just make it without adding much flour or egg. Gives it a distinct french bread like flavor to it.
Once I get the pan hot and the butter melted I can pour the mixture into the hot butter in the pan. Waiting a few minutes will make the edges firm up and a few minutes later they can be flipped. I make a few of these patties with my left over sourdough. I could make even more if I added in egg and flour. But for a strong sourdough flavor I find using just the left over dough to be the way to go.
I lay the patties on some paper to dry out and cool down before putting them away in bags or glass containers. I can let them cool and then place them into the refrigerator. I even freeze them and then thaw them out when I want a few for a trip. I always have a supply of it when I am making my own but its good to have extra in the freezer if I ever stop making it.
