Greetings!
Here is another snack food that is one of my favorites when I was young and still my favorite until now. Most of the time this delicacy is cooked with left-over boiled cassava and is very delicious when it is eaten while it is a little bit hot.
This snack food brings nostalgic memories to me because I and my late father used to harvest cassava on our small farm then cook it as Nilubyan during the rainy season. Nilubyan is also nice when partnered with coffee and hot milk.
As far as I remember I was introduced to Fried Nilubyan when I was just about five years old because it was the year when my father would always bring me with him whenever he is going to harvest cassava on our small farm.
My father would always cook Fried Nilubyan using margarine when I was young since margarine can be bought in almost any store. But as I found out using butter is a nice substitute for margarine. You can use by type of butter if you want.
Actually, you can eat Nilubyan on its own without frying it, you add butter or margarine to the mashed boiled cassava add some sugar and that's it. But I also like it fried because it gives a little bit of distinct taste when it is fried.
Aside from butter or margarine, you can also add cheese as an additional ingredient. Also, you can add a small amount of flour so that the mix will not fall apart easily.
And of course, you can definitely use a blender or any instrument in mixing all your ingredients. In my case, I am just going to use a spoon and pork in mashing and mixing the ingredients for some added texture. But if you want a finer mix then you can definitely use a blender or any mixing instrument.
I have never tried baking a Nilubyan, with that being said, you can definitely try to bake the Nilubyan instead of frying it. And if you do try to bake it please let me know in the comment section how it turned out.
I knew I have seen someone grill a Nilubyan after wrapping it with banana leaves. And if you did try grilling it please let me know also in the comment section how it turned out.
So, without further ado here's how I prepare and cook this very simple but also very delicious snack...
- Left-over boiled cassava
- Butter (or margarine)
- Sugar
- Cooking Oil
Prepare the left-over boiled cassava

Prepare the butter

Mash the boiled cassava then add butter

Add some sugar

Mash it again until you get this consistency

1. Using a ladle get some Nilubyan mix and form it into a circle then fry both sides in low heat until golden brown. Do it to the rest of the mix, and that's it, it is done...
