Greetings!
Here's a dish that always brings back memories of my childhood whenever I see or eat. It is a very simple but also very delicious dish (it is always cooked as a snack). It is called "Ginataang Kamoteng Kahoy" (Cassava with Coconut Milk). The equivalent of the term Coconut Milk in our language is "Gata", hence the word Ginataan, we call Cassava as Kamoteng Kahoy.
It always brings back memories of my childhood because my father used to plant and grow cassava in his small vegetable farm which I always help in planting the cassava and of course he (my father) always bring me with him when it is time to harvest. I can still always remember that my father is always planting cassava in the rainy season since it needs lots of water.
Harvesting cassava is no easy feat since you need some strength in pulling the cassava from the ground (depending on the type of soil). But sometimes we dig it up instead of pulling it up directly from the soil.
After harvesting my father then cleans up the cassava, peel the skin then slice it up into small cubes (irregular cubes) then will cook it with coconut milk).
By the way, I always enjoyed peeling the skin of cassava because it is a lot of fun (which is still the case now).
This will be the first time that I am going to cook this dish. Thanks to my late father because I learned it from him.
So, without further ado, here's how I cook this very simple but very delicious snack...
Some tips before we proceed, this snack is best tasting when it is not very sweet and if has a lot of coconut milk added. And also using natural coconut milk from real coconut is the best to be used in this dish, but I am going to use commercial coconut milk on this one because I don't have real coconut at the moment.

- Cassava
- Coconut Cream
- Sugar

Peel the cassava (then wash it after peeling)
After washing the cassava slice it into cubes (irregular cubes will do, just like what I have done)
Prepare the coconut milk (you can use more coconut milk, the more the better)
Prepare the sugar (you can use white or brown sugar)

1. Put some water into a cooking pot that is proportional to the cassava and to the coconut milk (the less water the more delicious the dish will become)
2. Put all the sliced cassava into the cooking pot
3. Put the coconut milk, add some sugar (add more if needed), let it boil. When the cassava is cooked it is now done... so easy...
