Greetings!
Here is another very simple but very delicious snack that I want to share with you guys, it is one of my all-time favorite snacks. I was introduced to this snack when I was still very young (when I was about 5 years old if I remember it right).
Back then I rarely eat this snack because my father would just boil the sweet potatoes (boiled sweet potatoes is delicious too!). And also because my family would usually use brown sugar for coffee rather than use it to cook Kamote Cue. Another reason is that sweet potatoes are not readily available for us to cook, we have to buy from a market that is about a twenty-minute drive from our house.
Back then, my father would always buy large sweet potatoes and slice them slightly thicker just like on those that are sold on the market. By the way, this snack is quite popular too in a town adjacent to ours (sold to the market where we are frequently buying the sweet potatoes). But they slice it a little bit thick.
This snack is also one of the most frequent snacks that I am buying whenever I got home from school. It is very delicious when it is a little bit hot and it is great when partnered with a cold drink.
Any type of sweet potato can be used in cooking this snack and you can slice it any way you want but I do suggest that you might want to try how I slice them if ever you are going to try cooking this very simple but very delicious. Also, slicing it as thin as possible makes the cooking a lot quicker.
By the way, in our language, Kamote is the term for Sweet Potato.
So, without further ado here's how I cook this very simple but very delicious snack... cooking time is about five minutes...

- Sweet Potatoes
- Brown Sugar (about 125 grams)
- Cooking Oil

Peel and wash the sweet potatoes
Then slice it into a circular form (about as thick as an Oreo cookie)
Prepare the brown sugar

1. Heat some cooking oil in medium heat (the cooking oil should be more than the brown sugar)
2. Add the brown sugar (add more later if needed)
3. Wait for it to start melting (caramelize)
4. Stir it gently using a ladle while it is melting (caramelize)
4. Wait for it until all the sugar is melted (caramelized) while stirring gently
5. When all the sugar is melted (caramelized) add the sweet potatoes
6. Stir it frequently so that the caramelized brown sugar will be distributed evenly among the slice sweet potatoes
7. When the sweet potatoes are cooked and when all of them are covered with caramelized brown sugar it is done
