I'm happy to show you some of our foods and meals this week, as I'm sure I didnt take photos to everything 100%.

Mini Berries Cheesecake
I'm gonna post this recipe separately because it has a story behind it worth sharing but what can I say it's this: it was DELICIOUS!
The ingredients are the same you use to a regular cheesecake. The difference is you dont need to make a biscuit crust out of graham, sugar and butter. Here you just put some crushed biscuits.
This is a recipe we found in one of my son's nutrition books. So we did this together.
Chicken & Peas Soup
This is a classic in Romania. I love this soup! Its one of my favorites.
All you need is this: chicken ( I have chicken raised 100% at home so you can imagine the delicious taste if has), peas, carrots, onion. Put them in a pot, boil everything until ready and then you have to do some Semolina Dumplings.
These are not easy in case you dont have experience making them.
Ingredients for dumplings: egg, semolina, salt.
I'll a secret with you, one recipe I found three years ago and since then I never failed making perfect dumplings.
Here's the procedure. You take one egg and measure it. If the egg has, lets say, 70g, you measure 70g of semolina too. Remove the egg shells and beat the egg. Then add a bit of salt and one spoon at the time, add semolina. Let it 10 minutes to rest and then add them to your soup. Let them boil until they're nice and fluffy!
Egg and Red Bell Pepper Breakfast
This was actually for Caleb, my preschooler. He loved it. The idea of it. I honestly can't say I loved it. I prefer having fresh peppers instead of cooked ones.
Oatmeal for Breakfast
This is my son's favorite. Oatmeal topped with cacao powder, carob powder and cinnamon.
I usually make the oatmeal with vegan milk like coconut milk, almond milk, rice or oat milk. Sometimes I do it myself, sometimes I buy it from the store.
And rarely, very very rarely I use plain milk or goat milk. Or I like to combine milk with water. That works too.
My son is obsessed with Oatmeal. And actually the moment I'm writting this, he's having an oatmeal, exactly like this one. 😅
Oven Baked Veal Slices topped with Mozzarella and Tomato Sauce
This recipe I'm going to share in details. We love it and actually got inspired by something similar we use to have to one of our favorite Italian restaurant.
I love the recipe because its oven baked, so no frying. You just need to sprinkle a bit of olive oil in the pan.
And one more thing: this recipe doesnt require a lot of time. I think 30 minutes its how much you need to prepare this.
We served it with a green salad and thats it.
Beef and Parmezan Green Salad
I mentioned last week my husband loves beef. So we have these kind of salads very often. Sometimes I make my salad the same, other time I replace beef with chicken or grilled cheese.
With this salad we had roasted pumpkin seeds, a mix of salads, leeks, apple and a bit of camembert cheese. And of course the king of all, parmezan cheese slices.
For dressing I put cold pressed pumpkin oil. It was so delicious, this combo!!
Chia Seeds Pudding for the little one
Also my son is in love with Chia Pudding. He adores it. His favorite is Berry Chia Pudding.
Here's how to make it:
You need vegan milk, chia seeds, honey and vanilla (optional), mix of berries.
In a jar add 2 cups of milk and a few Tbsps of Chia Seeds. Add the fruits and honey and mix very well, until all combined.
Let it stay overnight on the fridge or if you want it for afternoon, prepare it in the morning. You need a few hours for this because chia seeds has to soak all the liquid.
Nachos at home
My husband is in love with this. I'm not saying I don't like it, but the truth is I never do it for myself. I prepare one portion, as you can see in the pictures, and I'd only take 2-3 tortillas. Thats it.
The story with these begins in Canada, where we had it for the first time. We served it to cinema.
And we're still making it from that moment.
What you need is tortilla chips, cheddar cheese, hot salsa (or mild) and jalapeno peppers.
Put one layer of tortillas in an oven proof dish (or a ceramic plate), grate cheddar cheese on top, put some jalapenos and salsa too.
You can repeat the process if you like.
This dish is perfect for a movie snack at home. Or without movie hehe.
Burrito Bowl Salad
I cook this recipe for more than seven years. I got inspired by a recipe we used to serve at the mall foodcourt but they dont serve it anymore. So I tried to make a copy cat of what we used to have there.
Ingredients: boiled rice, grilled chicken, tomato sauce beans (I admit I use a can of these), onion, tomatoes, yellow pepper, hard cheese, sour cream, iceberg salad.
The process is this, considering you have boiled your rice, grilled your chicken and have a can of tomato sauce beans.
You have to layer all ingredients in this order:
- rice
- beans
- grilled chicken
- onion
- pepper
- tomatoes
- sour cream
- hard cheese
- iceberg salad on top.
My kid doesnt like to have so many ingredients all on top of another.
And he doesnt like sour cream, hard cheese, onion or salad.
So I prepared for him his plate, exactly like this.
He is a bean lover!
Fried Chicken, Paprika Potatoes and Green Salad
This is not the healthies meal but surely its something Romanian people use to cook.
For the chicken I boiled it first. Then I mixed flour with egg.
I put the meat through this mixture and then deep fry it.
For the potatoes: boil the potatoes. In a pan, put some olive oil. Add a small onion and saute until softened. Add paprika, salt and pepper and then the potatoes.
Make a salad on the side witg whatever you have at home.
My salad ingredients: green salad, cherry tomatoes, green bell pepper, red onion, mustard seeds.
Kiwi Green Smoothie
This is not a fancy one. Just some spinach, bananas, oat milk and kiwi. Voilà !!
Bee pollen on Rice Crackers
This is something I often have. I like rice crackers with almond or peanut butter, apple, pear or bannanas. And always, topped with bee pollen.
I think bee pollen is a complex ingredient and I believe in its claimed healthy properties.
This time I had creeme cheese, honey and bee pollen. Its a great source of energy. You can have it for breakfast or as a snack.
Tofu and Pomegranade Salad
I needed a quick salad and this is what I came with: a mix o salad, olives, pomegranade and tofu.
Used olive oil for dressing and thats it. Quick and easy for busy days. You can have it as a manin dish or a side dish.
Eggs and Avocado Toast
This is a regular breakfast I think for most of Americans. And not just for them.
I like avocado, eggs and toast! Its my kind of breakfast!
Avocado was a sort of Guacamole but some ingredients were missed. I only add olive oil, garlic, salt and black pepper.
And that cherry tomatoes with goat cheese was simply what this meal needed.
