It's been already one month since I last shared with you a food post. I hope you'll enjoy this one though!
A couple of days ago we've had a lovely time with our friends and actually, we cooked together something similar with what I'll share with you today. Is just that with all the "catch-up" talking and amazing atmosphere, I forgot to take some photos. But then I remembered I have these ones, which are basically what we cooked.
We had chicken skewers, rice, a salad and some stir-fry mushrooms.
I leave you the recipes here, I hope you'll enjoy them!
Stuffed Mushrooms
Ingredients:
- brown or white mushrooms
- a few spinach leaves
- parmesan cheese
- hard cheese like mozzarella or something
- 2-3 cloves garlic
- salt and pepper
Step by step recipe photos:
Saute spinach leaves and garlic in a pan along with a few drops of olive oil or water.
Cut the chesse in little cubes. Mix parmesan, cheese, spinach, salt and pepper all together.
Prepare the mushrooms by removing the "foot" and add a little bit of olive oil. I used some herbs de provence too.
Then add the mixture into stuff these nice round brown mushrooms.
Transfer them into a pan and bake them for like 20-30 minutes. Add more parmesan cheese on top and add a foil to not overburn. Or you can use a glass caserole if you're afraid of using aluminium foil.
You can serve them along with rice and salad and have a delicious vegetarian dish. The cheeses and the mushrooms have plenty of vitamins and protein to replace the meat.
In fact, mushrooms are one of the greatest source of protein you can have in order to replace or cut the meat intake.
Chicken Skewers and Lime Rice
Ingredients for the skewers:
- chicken breast
- onion
- bell pepper
- salt and pepper
Ingredients for the rice:
- green onion
- ginger root
- basmati rice
- lime juice and peel
- half and half cream or coconut can
- butter
- water for cooking
- turmeric powder
- fresh dill
How to cook this delicious golden rice
First, saute green onion and ginger in a pan with some butter.
Then, all at once, add the other ingredients to the pan, except the dill and turmeric.
After the rice is nicely done, add turmeric powder and fresh dill.
Take care not to over cook it. You want your rice to be tender, but still firm, no mushy.
If you consider it needs a little more water, add some more. But just little by little. You dont wat to stop the rice from cooking. Or even better, add boiled water if needed.
As for the chicken skewers, you dont need many instructions.
Season the meat with your favorite mix of spices. O usually got with salt pepper and some Italian herbs like oregano, thyme and basil. Sometimes I add paprika too.
Cut the veggies into big chunks. You can add more veggies if you want, like zucchini, eggplant or mushrooms.
You can make them on the grill or in a skillet, thats up to you. I think it goes in the oven too.
If you want the meat to be perfect, make a marinade of olive oil and spices and let them overnight in the fridge.
You can adapt these recipes and easily have a vegetarian version, or even a vegan one.
You can replace the chicken meat and add mushrooms, eggplants, tomatoes or tofu.
Or you can cut the cheeses from the stuffed mushroom recipe and add nutritional yeast, onion, pepper , quinoa, rosemary, thyme.

For me personally, this golden rice is amazing 💛. I love it because it is so flavorful. As for the chicken skewers, I love them too. Chicken is my favorite meat and ofc it goes best with veggies. Bell pepper and onion? YES, PLEASE! even better!
