This is one of those recipes that you prepare it in 30 minutes and then you're just waiting for it to be. It's full of nutrients too.
You don't need to prepare anything in advance. Just start preheating your oven to 180°C and follow instructions below!
In this recipe I added Nutritional Yeast as a Vitamin B booster. It's perfect for this recipe since these flakes has a cheezy texture and taste, don't you think?
Ingredients you'll need:
- 2 zucchini boats
- one small/medium tomato
- 2 green onions
- one piece of chorizo
- one handful of spinach leaves
- 1 cup cheeze
- 1/4 cup nutritional yeast
- salt and pepper (according to your taste)
Cooking and Prep Instructions
Don't worry, in fact you wont really need any of these. It's pretty clear what you have to do.
First, cut the zucchini in half and remove all the seeds.
Cut all ingredients in small pieces and mix them up.
Part of the zucchini core that I took out, I cut it into very small pieces and I combined it with the other ingredients.
Finally, add the nutritional yeast, mix everything, fill the zucchini boats and bake them for 20 minutes or so, depends on the oven and the temperature you set.
You can skip adding the nutritional yeast flakes, but since they are very rich in B vitamins, I thought this is a good recipe to put them in as well.
And this is how they turned out! It's kind of an easy meal, I think it's keeping you really full even though you won't realize it right after you'll finish the mea, you get your fiber, your protein, your veggies, all in one.
You can have them as a side dish, but I think they're fine as a main dish as well. You can have a dessert after, a healthy snack or a fruit, some nuts and it's quite enough. You can serve it as lunch or dinner.
If you skip the chorizo, then it's a good side dish along one piece of grilled meat or fish.
