Hello foodies,
If you're in mood for some fish (and pasta) but there's little time, this recipe could help you because:
- it's time saving &
- 30 minutes MAX
- there are only a few basic ingredients
- it's delicious
I learned cooking this recipe from my friend who's very very good in the kitchen. She's always cooking delicious recipes.
I loved it from the start!
The ingredients are just a few and with some luck, you'll have them at home in your cupboard
Ingredients:
- pasta (any type is good)
- one big onion
- one big fresh tomato or two medium tomatoes
- tuna fish (canned)
- 2-3 tbsp pesto (bought)
- olive oil
- salt and pepper
- fresh basil (optional)
I often make this recipe but this time I added EXTRA a few tablespoons of a dehydrated tomatoes and capers mix, but this is optional. Still, it was delicious and I recommend adding it to the recipe if you can buy it.
The tomatoes has to be fresh and tasty, which is why I often cook this recipe in summer. I love the authentic taste of tomatoes. I didnt try it with tomato paste but it should work.
Feel free to use your favorite pasta like spaghetti, rotini, fussili, penne etc).
And this recipe is easy adjustable if needed. For example you can skip pesto or you can add capers. I wouldnt skip pesto because it's just great in this recipe. It wouldnt be the same without.
Also, kalamata olives are perfect for this recipe. You can add some if you have them in hand.
Instructions:
Start with diced onion. Cut the onion in small cubes and add it in the pan, together with some olive oil. Cook it for a few minutes until onion is translucent and then add diced tomatoes.
Ohh and don't forget to boil the pasta according to the package's instructions and time.
Add salt and pepper and cook until is well done and tomatoes have released their juices. Don't overcook it because you need the juice from tomatoes. So when they're ready, add tuna fish and cook it for a few minutes more.
My friend, use to blend this mix of onions and tomatoes with a vertical blender to be smoother but I don't do it. First, I don't think it's needed and because I don't want to spend another 5 minutes doing so. I know it's not much time spend for this extra step but I don't bother. If you consider you'll like it this way, put everything in a blender, food processor or use a vertical blender to smooth this up.

In the end add pesto, cook for one minute and that's it. The sauce is done.
I often buy the pesto but from time to time I do my own. Especially in summer when I have large bushes of basil in the garden.
Feel free to use your own too.
Strain your pasta and then add it to the pot. Enjoy your meal! 🙂
Garnish with fresh basil leaves! You could add some in your sauce too if you want.

My son ate these pastas with so much excitment, I was simply amazed!
And even though he likes fish in general and he tried all kind of fish over the time (and his favorite is salmon), I actually doubted that he would want to try this recipe or even more, eat it with so much joy.
Why? Because let's be honest, they're not having the best look.
My husband doesn't like this recipe only because it's not good looking with all that little tuna fish strips in there, it's not so attractive. And he has a thing for bad looking dishes. Well, he's not really a fan of tuna fish cooked with pastas or so...but still. You know what I mean.
