I love southern Italy recipes and cuisine, a long traditional cuisine full of yummi dishes, casatiello is a part of a popular poor cuisine its a rich and nutritive food. It's similar to the recipe of the bread but added with the spicy sausage from Naples and the tasty pecorino cheese and other things, you can add things that you have in the fridge like other cheese or Ham or even vegetables. The most cool thing if this recipe are the fresh eggs inside the dough ,really a eater delicacy fir children and adults.
Let's make it, we need four eggs, water, flour oo,
Yeast, salt ,black pepper, extra virgin oil . Spicy sausage, pecorino cheese and love!!
First of all mix yeaat and water add the oil and pit All in a planetary very useful oer to do any inoadto I would say very essential, mix everything if you have it, add some lard.
Add half of the flour dose than wait until il became like a pastry.
Add the salt and the flour. Work it with the planetary when the dough is ready enough tender than put it on the work table and work it in a circular form use the mold if it's more good for you, that's what I did.But first fill the dough with the sausages slices and pecorino cubes than put all in the mold before knead it well so the sausage and the pecorino get mix with the dough, save some pieces of dough for embracing the eggs than put on all some black pepper 🌶️. Than cover it with a rag and let it rise for an hour and then put it in a preheated firing at 175 for forty-five minutes, after which you leave it out and cool a little, it will be delicious and you can also eat it cold, very good!
