What do you think of a seafood like scallop transformed with a combination of papaya. It must be a delicious dish with abundant spices to be enjoyed on a special day with your family. Unlike this time, a simple recipe of dara clams that can make you hungry and miss it anytime. This simple dish is a recipe from my mother, who said that peeled papaya is very good with pomegranate clams. My mom often prepares this at home when she buys mussels, and since I'm out of town I miss this dish.
Finding fresh papaya like my mother usually makes is very difficult, as a result I took the initiative to use young papaya. Although the results are slightly different from mom's cooking but enough to change the feeling of longing mother's cooking treated. Now this recipe itself is known as our local language Asam keung kreung boh putek or in Indonesian, the spicy acid of young papaya shells. It tastes like the title, but what I like about this recipe is that it is only seasoned with salt and is very tasty without any broth. That's what makes me really like the characteristics of the taste of this recipe.

Ingredients
¼ small young papaya
100 gram clams
3 sunti tamarind fruits
3 orange leaves
5 pieces cayenne pepper
2 cloves shallots
A few tips for those of you who want to prepare this spicy and sour sauce. In making papaya kuah kerang, you should use half-ripe papaya with a firm texture. The result will be better, you will feel a very savory taste sensation from both. Now as I mentioned above, because I really want to enjoy seafood with a fresh sensation now. I used papaya in the garden, all of them have not been installed, as a result I used what was there. The result is also very good but I still recommend that you use the base for maximum results.
Cooking Procedure
Step 1
One quarter of the papaya I used first cleaned the skin, be careful when cleaning it because papaya is easily gummy.
Step 2
Cut the papaya thinly, follow the shape
of the papaya according to each taste.
Step 3
Once cut, soak the papaya in salt water, so that the sap comes down and is perfectly clean.
Step 4
Heat one and a half liters of water then Let it boil, while waiting for the water to boil, prepare the spices Cayenne pepper and sunti acid plus a teaspoon of salt in a mortar.
Step 5
Then grind until smooth and put it in the water that was cooking earlier.
Step 6
Cut shallots and lime leaves according to taste.

Then add the lime leaves and onions into the seasoned soup.

When it boils, add the clams, now the clams I use are frozen which I have seasoned with salt and also lime juice. Don't forget to stir the clams in the sauce, wait until it boils completely.
Step 9
Enter the papaya that has been soaked with salt water and then stir evenly, let the papaya cook perfectly.
Result
This soupy dish with a savory spicy sour taste sensation is ready to be enjoyed, serve it in my favorite bowl and then I sip it while it's warm. Ahhh this is so delicious, the fresh flavor of the clams and the papaya as a vegetable is enough to make me forget to stop enjoying it. I love the aroma of citrus leaves, it makes the mussels not fishy at all.
