A simple dish makes something more enjoyable than a fancy one, but did you know that sometimes a side dish is an important component of any celebration?.
Today I will prepare one of the complementary dishes for the pilgrimage to the grave which is done before the month of Ramadan. Usually our dishes are prepared at home and brought in a bushel and then enjoyed there together. At home, my mother has prepared the main dish of chicken curry. But usually we prepare a complementary dish in the form of salted eggs or eggs balado as I want to prepare now.
Egg Balado
Let me take you through some simple steps to prepare!.
Materials required
2 tablespoons sugar
½ teaspoon salt
2 bay leaves
1 pandan leaf
2 tomatoes
7 cloves shallots
2 cloves of garlic
6 dried red chili peppers
Cooking Procedure
Prepare the eggs first, wash the eggs thoroughly then cook about 1 liter of water until it boils then put the eggs carefully so they don't crack.
Boil the eggs until cooked for about 20 minutes, so that they cook optimally, here when boiling I use ¼ teaspoon salt, so that the eggs are more flavorful, then after cooking let cool and set aside first.
While waiting for the eggs to cool from the stew earlier, I prepared the spices, blender and then prepared a little cooking oil in a pan.
Sauté a clove of onion and all the aromatic leaves until they wilt and give off a fragrant aroma.
Then add the spices that have been mashed in the pan and saute until the water shrinks slightly.
Then after shrinking, I added back enough water, then I just seasoned with salt and sugar.
Wait until the balado is cooked here, usually when the oil in the chili will be above and the water content is no longer there. Now during the process of cooking chili sauce I while cooking rice.
After the sauce is cooked, I make sure the eggs are cold then peel the skin clean and neat. Well this egg cooked just right and when peeled off the outer skin is very beautiful.
Then fry the eggs with hot oil, until brownish yellow. Then then apply the egg into the cooked balado earlier.
Result
My egg ballado style is ready to be served, usually in my area egg ballado is enjoyed with warm rice is very good. Balado eggs that are boiled and then fried give an unusual flavor.
The eggs are cooked very well, with a spicy, sweet and savory balado flavor all very fitting. Moreover, the color is bright and very beautiful. I am very happy that the combination of fresh red chilies with dried red chilies provides a more attractive color for the sauce.
Look at the results of my mother's homemade ayam kampung curry, it's very tempting, very creamy and most importantly it tastes very good like no other. I really enjoy cooking ayam kampung with Aceh's special spices, it's perfect.
Now because I prepared this for the kenduri event, I prepared it in a serving basket to be taken to the place of prayer at my brother's grave later. Not only eggs, I also cooked Aceh curry curry with free-range chicken.
I packed everything neatly in a yellow basket box for my mother to carry. I usually join the pilgrimage, but since my father is sick, we couldn't make the pilgrimage together this year. I can only pray from home for my sister, that everything will be blessed.
