When I have a busy day coming up, I always cook extra rice the night before, and plan to make a quick delicious dish by using the leftover rice. 🍚
So today I'll cook Fermented Sausage Fried Rice - Khao Pad Naem. This Fermented Sausage Fried Rice is super delicious and very easy to make. It takes just 10 minutes to make, so it’s a great choice for busy evenings! 😃
🇹🇭 Khao means Rice while Pad is to Stirred and Naem refers to Fermented Sour Sausage. 🔘
Fermented Sausage or Naem is the star ingredient of this recipe. It's a type of sausage which is traditional food in many countries around South East Asia, such as Thai, Vietnam, Cambodia and Laos. It’s commonly consumed raw, or used as an ingredient in various dishes.
Naem is a preserved sausage made with pork, pork skins, cooked sticky rice, garlic, salt, sugar and bird’s eye chilies. Then fermented for 3-5 days. Naem tastes mainly sour, and has strong garlic taste and a little bit spicy.
Making khao Pad Naem is easy, but there are a few important thing to get right. Firstly cube and dice to cut all the ingredients into a square pieces at equally size. For get the full favor in one bite snap. 😀
Stir-fried at medium heat and let the juice from Fermented Sausage caramelized all over the rice, we don't need any char or slightly burnt as another type of Thai Fried Rice. 😄
Khao Phat Naem prepared with Thai steamed jasmine rice and contain with Fermented Sour Sausage, egg, onions, garlic, tomatoes, and Chinese Kale.
Then seasoning with soy sauce and a pinch of sugar then wok over medium heat until all ingredients get delicious caramelized, served with fish sauce with chili as a dipping sauce plus an icy cold beverage as optional. 😄
What we need for khao Pad Naem!
- 6 Cup Cooking Rice
- 200 Gram Naem (Fermented Sour Pork)
- 2 Egg
- 1 Onion
- 1 Tomato
- 1 Cup Chinese Kale Leaves
- 1/2 Cup Chinese Kale Stem
- 3 Tablespoon Garlic
- 1 Spring Onion
- 2 Tablespoon Soy Sauce
- 2 Tablespoon Oyster Sauce
- 2 Tablespoon Seasoning Sauce
- 2 Tablespoon Canola Oil
- 1 Teaspoon Sugar
How to make Khao Phat Naem.
Chili Fish sauce Preparation!
- Comebine chop garlic, chop chili, fish sauce and lime juice together.
Let's seasoning first!
- Drop the soy sauce, seasoning soy sauce, oyster sauce and sugar in the bowl of rice.
Wok Process!
- Drop the chop garlic into the hot wok over medium heat and whisk it quick until garlic turn golden yellow.
- Drop the fermented sausage into the wok and let the juice from fermented pork come out.
- Move the fermented sausage to one side of the wok.
Crack the egg into the other side.
- Whirl the egg up.
- Scramble until almost firm.
- Drop the rice into the empty side.
- Toss ingredients together.
- Drop the stem of Chinses kale.
- Add the onions, sauté until softened and slightly soft.
- Add the tomato into the wok and toss the ingredients together.
- Add the Chinese kale leaves into the wok.
- Add the spring onion and toss quickly.
Plate the fried rice.
It’s really a time saver! I spent only 10 minutes in the kitchen and produce a very tasty meal for two persons.
