Each part of Thailand has its own unique food. Many popular delicious dishes come from the northern part which also know as Lanna and Chiang Mai is the center of Northern Thailand. 😀
So today I'll cook Khao Sawy - Thai Northern Curry Noodles which is the most popular and iconic of Northern Thai food. And right now Khao Sawy can be found in just about everywhere in Thailand.
Khao Sawy is well known favorite among locals but a couple of year ago Netflix has made them even more popular by appeared on the first episode of SOMEBODY FEED PHIL (S01E01) on the NETFLIX so let's cook together with me and see how does the Khao Sawy look like.😆
Northern Thai Food is slightly influenced by Burmese cuisines and Yunnanese Chinese because of the ancient trekking trader. The meat in Khao Soi can be chicken or beef. But chicken is the most popular option among locals and also vegetarian version which today I'll used beef Sirloin, ground beef and tofu for my recipe.
There are many things combine together for Khao Sawy.
It's a dish of warm delicious curry broth served with egg noodles, coconut milk, a slide of slow cook beef sirloin and meatball and topped with crispy fried egg noodles which usually add lime, shallots, pickled cabbage, and chilli flake oil as a spicy kick condiments to make the dish even more flavourful.
The main ingredients are the coconut yellow curry broth that combine with Thai red chili paste plus turmeric powder, curry powder and masala spices. The broth will get thicker and oily a little on the surface after cooked properly.
The beef will soft, tender and juicy with literally melted in the mouth and get along really well with the aromatic coconut curry broth.
🇹🇭 Khao Sawy always served with egg noodles or flat egg noodles which should to be a perfect cook by boiled it with extremely hot water and tossed it with oil which I did tossed the noodles by the red oily surface from coconut curry broth.
There are 2 ways of the noodles on this dish that is the boiled chewy one underneath and the deep fried crispy one on top.
Don't stress after see the various ingredients and component. It's super easy and totally worth it. 😄

For Coconut Red Curry Broth!
- 1/2 Cup of Thai Red Chili
- 2 Tablesp0xon Palm Sugar
- 1 Tablespoon Pink Salt
- 2 tablespoon Dark Soy Sauce
- 1 Tablespoon Turmeric Powder
- 1 Tablespoon Curry Powder
- 1 Tablespoon Masala Spices
- 450 ML Coconut Milk
For the protein component!
For Slow Cooked Beef Curry
- 300 Gram Beef Sirloin
- 1/2 Cup Coconut Milk
For Meatball
- 300 Gram Ground Beef
- 1 Teaspoon Salt
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Black pepper
- 1 Teaspoon Masala Spices
For Fried Tofu
- 2 Tofu
- 1 Tablespoon Vegetable Oil
500 Gram Egg Noodle
** 2 Tablespoon Vegetable Oil for fried the crispy noodles on top **
For fresh Vegetable
- 1 Cup Pickled Green Mustard
- 1/2 Cup Shallots
- 1 Lime
- 4 Bird Chili
- 1/2 Cup Cabbage
- Cucumber, Spring Onion and Coriander
For Fried garlic Chili Flake Oil
- 2 Tablespoon Vegetable Oil
- 4 Garlic
- 1 Tablespoon Salt
- 3 Tablespoon Chili Flake
Khao Sawy Instructions
Boiled the beef sirloin first
- Cut the beef half and pour the oil into the pan over high heat then drop the beef into the pot and sear the beef for both side. Then pour the coconut milk.
- Then pour a cup of water and slow cooked the beef for 15 minutes then set aside.
Meatball Preparation
- Drop all the spices and seasoning into the ground beef bowl and mixed it together and forming the ground beef into a round ball.
Here the Meatball!
- Drop the meatball into the hot pan and cooked them until the meatball turn to golden brown and set aside.
Tofu Preparation
- Cut the tofu into half and fried it into golden yellow and set aside.
Vegetable Preparation
- Minced the garlic and sliced the cabbage, lime and cucumber. Chop the spring onions, the chili and pickled green mustard.
The vegetable ready!
Let's cooked the coconut yellowvcurry broth!
- Pour the coconut milk into the pan and drop the chili paste. Then drop all spices and whisk them together and pour more coconut milk.
- Then drop the cook beef sirloin and meatball.
- Drop the tofu and pour more the coconut milk then add the salt, palm sugar
and beef broth. - Move the curry from the pan into the pot.
- Pour the dark soy sauce for coloring and taste and slow cook for 15 minutes until the meat turn soft and tender.
- Then take the oil from the surface and put aside.
The creamy and delicious coconut yellow curry broth done!
Let's cooked the chili flake oil condiment.
- Pour the oil into the hot pan and drop the garlic and cook it until golden brown and drop the chili flake and salt.
The Chili flake oil condiment ready!
Deep Fried the noodle instructions
- Spread the egg noodles. Then pour the oil into the pan and drop the noodles.
- Fried the boodles into golden yellow and rest into the rack.

Let's boiled the noodles
- Rinse the noodles by running water and drop it into the hot water and boiled it for 2 minutes and rinse the water away.
- Pour the oil into the boiled the noodle and whisk it together.
The noodles ready!
Putting It Together
Khao Sawy DONE!
Served Immediately along with a small bowl of chili oil condiment.
This dish is such a great combination and its the one of best Curry noodle ever.
It's creamy aromatic broth with soft and tender meat with spicy punch from a very unique Thai condiment and sassy sour and also the refreshing from fresh vegetable.
A warm yellow curry is so amazing!
