A couple of months ago I did show you guys how to make Chow Mein so today I'll upgrade to the another step by making Crispy noodles topped with sliced chicken and bamboo shoots stirred fried in gravy broth.

For this dish it is not actually Thai food but it is definitely Chinese cuisine. Thailand is one of the largest home for Chinese immigrates so we take culture from Chinese and food is one of them.

๐จ๐ณ Koi Si Mi is originated from Teochew Chinese cuisine which is the rare dish to be found at the street vendors and typically served at Chinese restaurants for family dinner or business meetings.

๐จ๐ณ Koi means Chicken while Si is to Stirred and Mi refers to Noodles in Teochew Chinses words.

It was hot and thick in the gravy soup with thinly sliced of tender chicken meat and freshy shrimp, slightly strips of bamboo shoots, slices of dried shitake and fresh king trumpet mushrooms and savory flavorful broth.

It was dip with freshly chopped Chili Vinegary sauce and Sour Soy Sauce.

The soup is an unique liquid Chinese thick and hot gravy soup and get along so good with fluffy crispy fried egg noodles which it is perfectly combination! And another fascinated thing for home cooking is I can deep fried anything with less oil and in this recipe, the noodles go 100% crispy like when deep fry with a load of oil.

Hereโs what we need for Koi Si Mi!
- 150 Gram Egg Noodles
- 50 Chicken Breast
- 4 Shrimp
- 100 Gram Bamboo Shoots
- 2 Dried Shitake Mushroom
- 1 King Trumpet Mushrooms
- 2 Tablespoon Carrots
- 3 Spring Green Onions
- 1 Tablespoon Chili
- 1/4 Cup Vegetable Oil
- 2 Cup Chicken Broth
- 1/2 Teaspoon Sugar
- 1 Tablespoon Soy Sauce
- 2 Tablespoon Oyster Sauce
- 2 Tablespoon Corn Flour
- 2 Tablespoon Tapioca Flour
- 1 Tablespoon Sour Soy Sauce
- 1 Tablespoon Vinegar
- Dash of Sesame Oil

How To Make Koi Si Mi!
Prepare the Veggie First
ย
Minced the Garlic
- Diced the garlic into the small cubes.
ย
ย
Sliced the carrots.
- Cut a V shaped through the carrots then slices it by equal sized.
ย

Sliced the King Trumpet Mushroom and Spring Green Onion.
ย

Sliced the Dried Shitake Mushroom.

Dip Sauce Preparation!
- Pour the vinegar into the bowl of chili.
ย

Let's Prepare the Meat!

Chicken Preparation!
- Sliced the chicken into thinly sliced.
- Drop the soy sauce, oyster sauce, sesame oil and white pepper and mixed it together.

Shrimp Preparation!
- Cut the head of the shrimp and peel skin away.
- Then cut through the back and pull the black vein away.
ย

- Drop the baking soda and mixing it for 2 minutes and rinse by water.
ย

Time to Fried the Noodles!

- Spread the egg noodles and pour the oil into the pan and drop the noodles.
- Fried the noodles for 1 minute at each side and rest into the rack.

Let's Fried Garlic for Garnish.
- Pour the garlic into the hot pan and fried it until the golden yellow!

Instruction for making the Gravy.

- Pour the Tapioca Flour and whisk into the water.
- Pour the Corn Flour into the same bowl and whisk it.

- Drop the shrimp into the pan and cooked for 1 minute each side or until the shrimp cooked.

Let's stirred fried first!
- Drop the chicken into the hot pan and drop the carrots, king trumpet mushroom, bamboo shoots and stirred them together.

- Drop all the sauce, dried shitake mushroom and stirred them together and drop the mixing bowl of flour and broth.

- Let's the gravy boiled and drop the spring green onions and shrimp.
