So today I would like to share you guys a delicious way to cook these flowers stem, Lotus Stem and Pork Belly Stir-Fried with Red Curry. 🇹🇭
Lotus stem are one of the most loved vegetables in Thailand. The lotus flower stems can be eaten raw as a fresh side vegetable or also cut into bite sized pieces and simple stir-fry, or classic cook with coconut cream. 🌷
The lotus stem texture is crunchy and has a sweet flavor like a water chestnut. Lotus stem require to prepare in a special.
Firstly peel off the skin and simply break off by hand, then some white fibers coming out of the stem. These are not good and need to remove them off.
Then soak in salt water for about 15 minutes to prevent lotus stem from turning black during stir-fried.
This recipe features a light quick meal but surprisingly flavorful curry made with lotus stem and pork belly that stir fried in Red Curry. Then combine with kaffir lime leaves, red chili and Thai basil. Other simple ingredients like fish sauce and palm sugar to balance it out.
Let's see the Ingredients!
- 500 Gram Lotus Stem
- 150 Gram Pork Belly
- 2 Tablespoon Red Curry Paste
- 1 Tablespoon Fish Sauce
- 1 Tablespoon Palm Sugar
- 1 Tablespoon Rice Bran Oil
- 1 Tablespoon Salt
- 4 Kaffir Lime Leaves
- 2 Chili
- 1/4 Thai Basil
Lotus Stem Preparation
- Create a water bath for Lotus Stem with a ratio of 1 tablespoon of salt to 2 liter of water.
- Peel the skin off.
- And broke the lotus stem by hand into 4 cm pieces.
- Soak the Lotus Stem for 15 minutes, then drain and rinse them.
- Slice the chili into the equal size, cut the kaffir lime leaves into half and thinly sliced, and pick up the Thai basil leaves from the stem.
Stir-Fried Instruction 🍳
- Add the oil into the wok
- Then add the red curry paste.
- Lower the heat and sauté the curry, then stir fried until aromatic.
- Add the pork into the wok.
- Whisk pork belly and red curry together until the pork cooked.
- Then add the lotus stem, and keep stirring constantly.
- Add the fish sauce and palm sugar in the wok, then stir fry until well combined.
- Add kaffir lime leaves, chili and Thai Basil Leaves.
- Lower the heat.
- Continuously stir fried until the curry broth get thicker.
Pour the curry into a shallow plate and served immediately with steam rice.
🍚 Jasmine rice is the perfect accompaniment, which warm steamed Jasmin rice will soaks up all the aromatic curry really well.
