There is nothing like having hot and slightly sour soup and spicy dip on a rainy day. Here the Thai special dishes that will turn my gloomy rainy day into a cozy and delicious meal. π

So today I'll cook Sour Mustard Green Soup and Funky Shrimp Paste. Because this dish is so flexible and easygoing, which each family has a favorite version of cooking style. So let's see my version. π½

The most important ingredient in this soup is pickled mustard greens, and known as Pak Gat Dong in Thai words. πΉπ
The other ingredients you need are garlic, peppers, coriander roots, and soy sauce, which makes this a very simple soup to make.

I did served the Funky Shrimp Paste as a perfectly paired up condiment. I find that they are great combination together.
Funky Shrimp Pasteis made by pounding together fermented shrimp paste, chilies, garlic, and seasoning with palm sugar, lime juice, and pea eggplants.

The pounding ingredients will create a thick dipping sauce. Itβs always served with vegetables, or with any sassy warm soup to lift up the spiciness flavor. This is a very popular for Thai people to cook at our household.

It is a very tangy soup with a salty sour taste, and perfectly get along with funky shrimp paste dip, which typically served with steam Jasmin rice. It's super easy to cook and no need to marinate anything. Just toss everything in one pan and stewed it for 30 minutes and done. π

πͺ It is also an ideal dish when you have a headache or a bad stomach. As the sour taste will awake your taste buds, and refreshing your day.
πΉπ Thai food is in general very hot and spicy, but there are many recipes which are not spicy so we always paired non spicy dish with spicy condiment. This is the way of Thai eating style, I think. π

- 450 Gram Pork Belly

- 400 Gram Pork Rib

- 1 Glove Garlic
- 2 Coriander Roots
- 1 Teaspoon Black Pepper

- 1 Tablespoon Seasoning Soy Sauce
- 2 Tablespoon Soy Sauce
- 1 Tablespoon Pickled Garlic Juice
- 1 Teaspoon Sea Salt
- 1 Teaspoon Oil

- 1 Glove Garlic
- 1 Sprig Onion

- 4 Red Bird Chili
- 10 Green Bird Chili
- 1 Tablespoon Fermented Shrimp Paste
- 1 Tablespoon Garlic
- 1 Tablespoon Palm Juice
- 2 Tablespoon Lime Juice
- 8 Pea Eggplants

Fried Garlic Preparation

- Pounding the garlic.

- Set the garlic aside.

- Pounding the garlic, peppers and coriander roots together.

- Set Thai Holy Trinity aside.

Sour Mustard Green Preparation

- Chop the Sour Mustard Green out from the head.

- Chop the Sour Mustard Green leaves into the equal chunks.

Set the Sour Mustard Green aside.

- Rinse the Sour Mustard Green with running water.
Β

- Cut the pork belly into half and take the skin away, and chop into the equal size.

Set the pork belly aside.

Fried Garlic Preparation!
Β
- Heat a pan over medium heat and drop the oil, then add the garlic, and fry it until golden yellow.

- Set the fried garlic aside.

Sear Procedure!
Β
- Add the pork belly into the same pan and sear the pork belly for both side, then add the pork rib.
Β

- Sear the pork rib and move the pan to one side and add Thai holy trinity into the pan, and toss the Thai holy trinity released the aroma fragrance.

- Toss the ingredients together, then add the salt, and all the sauce.
Β
Β
Continuously toss, and let's the sauce caramelized all over the pork.

- Add the sour mustard green and toss all the ingredients together.
Β
Β
Move the ingredients from the pan into the stew pot.
Β

- Pour the water into the water.
Β
Β
- Lower the heat, and keep stew the soup for about 30 minutes.
Β

Bring out the mortar and pestle while stew the soup.
Β

- Add the garlic into the stone mortar and pound the garlic as a rough paste.

- Add the shrimp paste and pound to mix.

- Add the chilis.

- And pound to mix.

- Add the palm sugar.

- Pound to mix.

Let's pick up the lime in my garden.

- Drop the lime juice into the stone mortar and add the pea eggplants.

Lid off the stew pot and turn off the heat after 30 minutes

Place the pork rib into the shallow plate. π₯

Place the soup into the another bowl and garnish with spring onions and fried garlic on top. π΅
