A couple of weeks ago I did show you guys how to make Pad Thai so today I'll step up to the another level by making Pad Mee Korat - Thai Hot Noodles Korat Style. 💜
🇹🇭 Pad means Stirred while Mee is to Noodles and Korat refers to Korat Province in Thai word. 🍜
Pad Mee Korat is the spicier version of Pad Thai. It is a spicy Thai noodle dish from Nakhon Ratchasima aka Korat province, Northeastern in Thailand.
Which is the most popular and iconic of Northeastern Thai Noodles. And right now Pad Mee Korat can be found in just about everywhere in Thailand and slightly popular throughout all over the world rightnow. 🇹🇭
Pad Mee Korat is well known favorite among locals but last year ago, Chrissy Teagen who is part Thai on her mother side which she is the model, chef, and influencer.
Chrissy has made Pad Mee Korat even more popular by appeared on her social media channel by cooking them with her mother then Pad Mee Korat was viral all over online world. My recipe was slightly difference from Chrissy so let's cook together with me and see how does the Pad Mee Korat look like.😆
It is made with rice noodles, meat, seasoned with dried chili, garlic, tamarin, dark soy sauce, palm sugar, fish sauce, and vegetables like chives and bean sprouts.
It's a fiery hot and spicy, little sweet, slightly tangy sour and savory aroma salty which is full of flavor in one bite.
Pad Mee Korat has a real punch of chili power that Pad Thai doesn’t have but you can cool down the heat if you want which is a perfect for a quick one plate dish for lunch or dinner.

There're a list of ingredients here!
For the Noodles
- 400 Gram Rice Noodles
- 200 Gram Bean Sprouts
- 50 Gram Chives
- 350 Gram Water
For Chicken Seasoning!
- 400 Gram Chicken
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Pepper
- 1/2 Teaspoon Chili Flake
For the Sauce
- 30 Dried Bird Chili
- 1 Glove Garlic
- 5 Tablespoon Tamarin Juice
- 2 Tablespoon Palm Sugar
- 1 Tablespoon Cane Sugar
- 1 Tablespoon Caster Sugar
- 2 Tablespoon Sweet Dark Soy Sauce
- 1 Tablespoon Salted Soy Beans
Pad Mee Korat Instructions
Seasoning Preparation
- pounding the garlic in clay mortar and take half away for garnish later.
- Drop dried chili into the clay mortar and pounding them together.
- Put them aside!
- Pour the water into the clay mortar and put a side.
Let's prepare Pad Mee Korat!
- Drop the fish sauce into the mixing bowl.
- Add the plum sugar into the same mixing bowl with fish sauce and mixing it until the plum sugar dissolved.
- Add the caster sugar, cane sugar and tamarin juice and mix them together.
- Here's the sauce!
Let's marinade the chicken.
- Add the salt, pepper and chili flake.
- Put the marinade chicken aside.
Time to fried the chicken.
- Add the oil into the wok and drop the chicken.
Using the high heat to cooked the chicken because we want slightly aroma char and a bit burnt smell.
- Fried the chicken for both side until the chicken get yellow golden crispy.
Put the fried chicken aside.
Let's fried the garlic for garnish first!
- Add the mash garlic into the same wok and fried it until golden yellow and set aside.
Wok Time!
- Add the pounding garlic and chili into the hot wok over high heat.
- Toss the chili and garlic with over high heat.
- Add the sauce into the hot wok.
- Whisk them together.
- Add the rice noodles into the hot wok.
- Drop the water from the clay mortar that we safe before into the hot wok.
- Whisk it quickly.
Add the sweet dark soy sauce.
- Add Salted Soy Beans then toss it together.
- More Toss!
Keep tossing until almost all of the sauce has been absorbed.
- Add the bean sprouts and chives.
- Toss for 30 seconds to combine.
- Switch off the heat.
Divide the Pad Mee Korat evenly into plates then garnish with fried garlic and served immediately.
You can cook without meat as well and substituted soy sauce instead of fish sauce then you have Vegan Pad Mee Korat.

This is an amazing stir fry meal that you can earlier prepare before served and just store in containers so you can just grab and eat!
