So today I'll cook a popular dish that is the great combination between rice and fruit, which is Thai Pineapple Fried Rice - Khoa Pad Sapparod . π

πΉπ Khoa means Rice while Pad is to Stirred and Sapparod refers to Pineapple in Thai word. π

Pineapple Fried Rice is well known favorite among locals and tourists, which also inspired Disney to created an episode of animated short film. When Mickey and Minnie featuring in the titled of βOur Floating Dreamsβ. Then Mickey and Minnie has made Pineapple Fried Rice even more popular, and becomes talk of the world. π

Khao Pad Sapparod is originated in Thailand a century ago. My authentic recipe version will bring the taste of Thai sensation, that has a perfect balance of sweet and savory flavors, and serve in a pineapple bowl for an exotic presentation! π

Khoa Pad Sapparod is an easy stir-fry with simple ingredients like jasmine rice, chicken, sweet sausage, and ham. And seasoning with soy sauce, then add the juicy from pineapple plus the crunchy from cashew nut and the sweetness from pork floss on top.

I use a combination of:

- Fresh pineapple (canned also possible)

- Jasmine rice 3 Cups

- 1/2 Cup Sweet Sausage
- 1/2 Cup Ham
- 350 Gram Chicken Breast

- 2 Eggs

Seasoning Ingredients!

- 2 Tablespoon Curry Powder
- 2 Tablespoon Soy Sauce
- 2 Tablespoon Seasoning Soy Sauce
- 2 Tablespoon Butter
- 1 Teaspoon Pepper

Vegetables

- 1 Cup the combination of fresh or frozen Peas, Corn and Carrot
- 1 Tablespoon Garlic

For Topping

- 2 Tablespoon Pork Floss
- 2 Tablespoon Cashew Nut

How to cut a Pineapple π
Β
- Cut the pineapple into the half through to the core.

- Using the sharp knife cut through the pineapple fruit.
Β

- Take out pineapple fruit.
Β

- Repeat for the another half of remaining pineapple.

- Scoop out the pineapple fruit to built a space for contain fried rice.

- Dice the pineapple fruits into smaller chunks for the fried rice.

How to cook the meat!
Β
- Heat a wok and drop the butter, and add the garlic and stir until the garlic released aroma fragrance.

- Drop the chicken, and saute the chicken meat until it's cooked.
- Add the sweet sausage and ham, then whisk together.
Β

- Mix them well over high heat.
Β

- Remove the meat to the dish.
Β

- Set the meat aside.
Β

- Heat a wok and drop the butter, and add the garlic and stir until the garlic released aroma fragrance.

- Pour the egg into the wok over meduim heat.
Β

- Scramble the egg and whirl the egg up and let it cook for a few seconds.

- Move the scramble egg to the empty side and drop the rice.
Β

- Combine rice and egg together.
Β

- Add the vegetable, and stir together.
- Add the seasonings, and combine well.

- Mix it up over high heat.

- Add the curry.

Return the cooked meat to a wok.

- Keep the high heat.

- Add the pineapple cubes and pepper.

- Place the Fried Rice into the pineapple boats! π

- Garnish with cashew nuts, and pork floss on top over the Fried Rice.

Jasmine rice is a great option for fried rice, and day old or cold rice is perfectly to stir-fly. It'll helps to prevent rice sticking together and avoid the soggy and mushy fried rice.

As I live in Thailand so I often use fresh pineapple because it's easy to find and really cheap as well, but feel free to use canned pineapple for this recipe.

Wok the ingredients over high heat to smoky perfection and slightly char all the ingredient, just the way the Thai do it! πΉπ

It's perfectly great taste on their own but the chili fish sauce will make it more kick punch, just the way Thai eat it! πΉπ
