Porridge with a soft texture like pudding, gives a new feel to the dining table when breaking the fast at the end of the month of Ramadan. Enjoying savory porridge with a combination of sweet sauce gives a special impression that cannot be replaced.
Today I am very excited in the kitchen, it's been a long time since I made this kind of porridge. Marrow porridge is one of the most famous porridges in Indonesia. This porridge is a traditional snack that has a savory and sweet taste.
There are various ways to enjoy this porridge, one of which is by enjoying it with palm sugar sauce. Well, apart from that, there are many people who combine this marrow porridge with pearl sago seeds, salak seeds and various other types of dishes. However, this time I want to make marrow porridge with real pandan flavor without a combination of the other types of ingredients that I mentioned above.
Pandan Marrow Porridge
This porridge is coconut milk porridge prepared with rice flour and added pandan flavoring. Just add salt to this porridge, but the way to enjoy this porridge is with a mixture of palm sugar sauce which has a sweet taste so the taste of the porridge becomes very delicious when combined.
Materials Used
10 tbsp rice flour
1 liter coconut milk
½ tsp salt
1 pandan leaf
To taste pandan flavoring
Palm Sugar Sauce Ingredients
250 grams of brown sugar
250 ml water
2 tbsp granulated sugar
¼ salt
1 pandan leaf
Cooking Procedure
Step 1
Prepare a cooking pan, then add rice flour to the pan, then add coconut milk and stir until evenly mixed.
Step 2
Make sure there are no lumps in the flour, then add salt and stir until evenly mixed.
Step 3
Then add pandan paste, until you find the color you want.
Step 4
When it's time to cook the mixture, add one closed pandan leaf, turn on the heat and cook.
Step 5
Cook while stirring so that the mixture doesn't stick to the bottom and cooks evenly.
Step 6
Stir until the mixture is thick and soft until cooked.
Preparation for Making Palm Sugar Sauce
Step 1
While waiting for the poridge marrow to cook, I started preparing the palm sugar sauce, mixing palm sugar and granulated sugar in a pan.
Step 2
Add water, then stir until evenly mixed.
Step 3
Also add pandan leaves, cook until the palm sugar is cooked, or boils. So, when boiling, you have to make sure it boils twice to make it more delicious.
Serving Suggestions
To serve the marrow porridge, add the pulp to a serving bowl then drizzle with one cup of palm sugar sauce or to taste. Because I didn't want it to be too sweet, I didn't add too much palm sugar. The taste is very delicious, soft sweet gueih blends perfectly. I really like to enjoy this porridge cold, the porridge tastes better and is very delicious.
Tips
So, a few tips for you, if you don't have rice flour, you can make it from whole rice. By soaking the rice for 4 hours in water, then blend the rice with a little water or coconut milk until smooth. The taste is exactly the same and in my opinion it will be even fresher if you use whole rice directly. Good luck trying the recipe!
