I have actually never ate the regular meatballs with spaghetti - vegan diet makes me try out so many new things!
But they always looked delicious - so making them vegan was so fun and, of course, tasty 😎

For the meatballs you'll need (12 meatballs):
- 60 g. seitan (wheat gluten)
- 15 g. wheat or other flour
- 10 g. nutritional yeast
- 0,5 teaspoon of salt
- A pinch of pepper
- 0,5 teaspoon of dried parsley
- 0,5 teaspoon of dried oregano
- 0,5 teaspoon onion powder
- 118 ml. water
For boiling the meatballs:
- 700-800 ml. water
- 1 cube of vegetable broth
- 10 ml. apple cider vinegar
- 1-2 tablespoons of barbecue sauce
For the pepper sauce:
- 2 red peppers
- A tablespoon of olive oil
- 150 ml. water with 0,5 cube of vegetable broth
- 1 teaspoon of dried basil
- 1 teaspoon of dried parsley
- 1 teaspoon of dried oregano
- A pinch of pepper
Preparation:
- Mix all the ingredients for the meatballs well - you will get a stretchy dough, it can be kneaded by hand. Don't mix in ingredients for boiling and pepper sauce here! Form small meatballs from the dough (they will expand a little while boiling).
- Boil water with the ingredients mentioned in the section "for boiling the meatballs". Put the formed meatballs in it and cook on low heat for 30 minutes. If you do not have some ingredients - you can cook just in vegetable broth. After meatballs are boiled - cook them on a pan with some olive oil until lightly brown.
- Cut peppers into strips, mix well with olive oil and bake in a preheated oven at 180 degrees for 40-45 minutes.
- Mix cooked peppers with the other ingredients for the sauce and blend until smooth with a blender.
- Serve everything with spaghetti, prepared sauce or other desired additives.
