So when we take this rice, we especially need curries. So today I brought you,even with rice and one more curry, you have a very delicious meal. That is eggplant curry. But this is one of the most delicious curry. Let's see how to make it.
Ingredients;
- 250g of eggplant
- A teaspoon of sugar
- 1/4 teaspoon of turmeric
- One and half teaspoons of salt powder
- Half teaspoon of mustard seeds
- Half teaspoon of mustard powder
- 1/4 teaspoon of fenugreek seeds
- 50 ml of oil
- 1/4 cup of thick coconut milk
- Half of finely chopped onions
- A handful of curry leaves
- Three cloves of garlic
- A piece of pandan leaves
- About three green chilies, cut into long
pieces - A few cinnamon pieces
- Two teaspoons of chilli powder
The method of making;
Wash and clean the eggplants and cut them into medium length strips. Cut into normal pieces.
Now add turmeric and salt to these eggplant pieces and stir wel.
Now put an aluminum pot on the stove, add oil and fry the eggplant pieces mixed in turmeric and salt. This should be fried for about two to three minutes.
Now add garlic and curry leaves and grind them into pieces.
Now add a tablespoon of oil from the remaining oil after frying the eggplants and heat it in a separate pan. When this oil is hot, add mustard seeds and fenugreek seeds.
Now add minced garlic and curry powder. Then stir.
Now add chopped onions.
Then add pandan leaves, green chillies and cinnamon pieces and mix everything is well.
Now add chili powder and mustered powder to it.
Stir everything on low flame for about a minute. After that add half a teaspoon of salt powder.
Now add coconut milk and stir the mixture with a spoon for about three minutes on medium heat.
Now add fried eggplants.
While cooking all these things on low flame, after about two minutes add the teaspoon of sugar.
Leave it for another minute and remove it from the heat.
Instead of just making the eggplant curry, when the eggplant is fried and cooked, it has a good aroma and taste. In fact, even if you don't have any other curry with rice, you can eat it with this curry. And very tasty. In a different way, this will be a good recipe for friends.
