Ingredients;
- 250g of eggplant
- 50g of green chillies
- 100g of shallot
- 200ml of oil
- Two cloves of garlic
- A piece of pandan leaves
- A few curry leaves
- Six cloves
- Six cardamom
- Few pieces of cinnamon
- A piece of ginger
- A tablespoon of tomato sauce
- A tablespoon of sugar
- A teaspoon of chilli powder
- 3/4 teaspoon of salt powder
- Half teaspoon of turmeric powder
- Half teaspoon of pepper powder
- Half teaspoon of chilli pieces
- Three tablespoons of vinegar
The method of making;
Wash and clean the eggplants and cut them into strips one and a half to two inches long. Cut into long strips that are not too thin.
Cut the green chillies in two so that they do not split.
Remove the skins of the shallot and wash them thoroughly. Wipe all these cut things thoroughly with a piece of cloth until the moisture is removed.
Fry the cut eggplants very quickly in oil. Frying in medium flame till medium golden color is enough.
**Add green chillies in hot oil for about twenty seconds and remove them. **
Fry the red onions in the same way for about ten seconds in normal flame and remove them.
** Crush cardamom.**
Then crush ginger and garlic.
Add mustard powder to vinegar and dissolve it.
We collect a clay pot and a wooden spoon to make eggplant moju. Because the acidity of the vinegar adds to the aluminum. Therefore, put an clay pot on the stove and fry the eggplants and heat two tablespoons of oil with the remaining oil. And crushed gingerandgarlic to it.
After frying like this for a minute, add pandan leaves and curry leaves.
Add cloves, cardamom and cinnamon.
Mix and then add turmeric powder, pepper powder, chili powder and chilli pieces and stir well.
Now keep the flame of the stove at minimum level and add the vinegar mixed with mustard powder and stir.
Add salt powder and sugar to it.
Add tomato sauce and stir and turn off the stove.
fried Add the eggplant, green chillies and red onions very carefully and stir them and keep them on the stove for another minute and then remove them from the stove.
