When it comes to chicken dishes we have lots of variants for a single dish. One good example is "Sinampalukang Manok" or "Chicken in Tamarind Soup". The standard way of cooking sinampalukang manok is by adding mustard and radish (radish can be committed). But this time I am going to use/add string beans instead of mustard and radish (which is the first time that I am going to try).
Another standard way of sinampalukang manok is using "young tamarind leaves" or "young tamarind flowers". Using tamarind leaves or tamarind flowers is very popular in our province of Nueva Ecija. When I was young my father used to cook sinampalukang manok with only young tamarind leaves and no other vegetables are added, it is just plain chicken and young tamarind leaves.
I Have to admit, cooking sinampalukang manok just by using young tamarind leaves and no vegetable added is the best of them all especially if the chicken is natively raised rather than bought from the market (at least for me). Using only young tamarind leaves makes the soup very natural and since young tamarind leaves are natural the soup's sourness is very natural too! So, without further ado here's how I cook "sinampalukang manok na may sitaw"...
- Chicken Wings
- String Beans
- Onion
- Ginger
- Powdered Tamarind
- Salt
Wash and slice the string beans
Peel and slice the onion
Peel and slice the ginger
Prepare the powdered tamarind
Wash the chicken wings

1. Put some cooking oil into the cooking bowl then add all the onion and ginger
2. Stir to evenly sautee all the onion and ginger
3. Add the chicken wings
4. Stir to evenly sautee all the chicken wings
5. Add some water
6. Add some salt then let them boil
7. Remove the bubbles when it starts to boil
8. When it starts to boil add the powdered Tamarind
9. Remove the bubbles again
10. Add the string beans
11. Using the ladle push down all the string beans so that they will be evenly cooked
12. When the string beans are cooked turn off the heat and it is done
