Today marks my first day eating a vegan + keto diet. Basically no carbs, fruit, & sugar for me! I'll be eating a lot plant-based protein, leafy greens, non-starchy veggies, and of course I'll be drinking a lot more water! Besides going on what appears to be a restrictive diet, I'll also be implementing intermittent fasting. That means I'll have an eating window of 8 hours for eating and 16 hours for fasting! I'm really looking forward to this change! I can't wait to update you guys on the progress! :)
This salad was huge and it had probably my favorite organic tofu ever!! It was a perfect consistency of firmness and softness.... juuuusssttt right!
