I can't believe I'm already here with my 6th food post. I literally don't know how time flies so fast! Really!...
For those who're not familiar with my weekly food posts, quick remind is this: I began sharing some of our meals during one week. When I say we, I mean Me, my husband and our little son.
This last week, we had a lot of times eating out, especially in the weekend 🥡. However, I couldn't get away without cooking though. 😆 So let me show you what I've been doing in the kitchen lately. 😋

Coconut Curry Chicken and Rice
This was one of my favorites this week! I didnt cook it in years. I forgot about this recipe but I missed the turmeric curry flavor and Voila!
It's an easy recipe you can try. First, the rice. Boiled rice with peas. But you can replace peas with green beans or leave it just like that. No veggies. It's up to you.
For the chicken curry, you need one can of coconut milk, butter, chicken breast, salt and pepper, curry spices.
First, add a little bit of olive oil and butter into a pan. Fry the chicken. Season with salt and pepper (or your favorite condiments).
You can cut it in chuncks or you can use strips. After its done, add the coconut milk can, curry powder and let simmer until you have a nice smooth sauce.
That's it! Enjoy!
Also, I think this recipe goes well for kids! So I think it would have been wonderful to share it in the Healthy Happy Kids Community!
Vegetarian Mushroom Sauce and Pasta
Sometimes it's good to leave the meat out. I used to eat vegetarian, vegan, raw vegan, keto. All styles. From time to time I chose to eat vegetarian for healthy reasons, as you can imagine.
This week I boiled some spaghetti and had a mushroom sauce. This combination is perfect!
For the sauce you'll need onion, garlic, mushrooms and heavy cream. Also a bit of parmesan would be awesome!
I had a mix of pleurotus mushroom and champignon. In a bit of olive oil (or butter), saute the onion for a couple of minutes. Then add mushrooms and garlic. After they're done, add heavy cream and let simmer until you get a sauce consistency.
Optional, add some parmesan cheese on top and fresh parsley.
Egg and Rucola Breakfast
No need for an introduction here.
Just a bread cracker with avocado slices, red bell pepper, rucola and a fried egg on top!
Love it! My kind of breakfast! 💛💚
Oatmeal Breakfast Bowl
Well, in this family there's no week without oatmeal. My son loves it. And one morning I thought to have some for myself.
But I wanted it to be royal so I added some more goodies! Berry chia seeds, tahini, honey, banana, cinnamon and coconut flakes! Ohh and then I found some cacao nibs. I added those too 😆

Veggies Pasta
Caleb loves pasta, mostly with shrimp, bolognese or veggie pasta.
I put some pene to boil. And then I had some veggies on stir fry: broccoli, onion, tomato and red bell pepper.
This is another recipe kids approved! So I think it would have been wonderful to share it in the Healthy Happy Kids Community!
Chicken Burrito
This kind of food is.....Yummy! I use do do burritos, all kind of combinations.
The base for a real burrito is the rice and beans mix.
For that do this: add olive oil in a pan. Saute for 5 minutes. Add beans, garlic, tomato sauce, chilli and mexican spices. Simmer until is ready. It takes no more than 15-20 minutes MAX.
Meanwhile, boil the rice. Now, you can combine these two, or assemble them separately. Your choice.
Grill some chicken. Cut them in peaces or have them as strips and cut them after. Your choice again.
The veggies: Green salat, Avocado, Red Onion, Cucumber, Bell Pepper, Tomato.
How to assemble on your tortillas:
- rice and beans
- veggies
- chicken
ENJOY!!
Oven Baked Veggie Tray and Duck
Aghhh this is a funny one! I can't give you a proper recipe because I'm not an expert when it comes to duck and the meat wasnt as tender I wanted it to be.
I tried to do an Orange Duck Recipe. I think I let it in the oven for too little and the temperature was to high from the beginning. Anyways, it was O.K. but it could have been better.
The veggies were fine, I put some parmesan cheese on the sweet potatoes and zuccini and it got burned! 😆😆
So this recipe right here it's not my best but I thought I should be honest and real with you and not post just the ones I like. :D This was not a disaster, but....:D .
We served it with yoghurt dill sauce.
Yoghurt, Berries and Granola
Quick Breakfast for lazy and busy days.
Greek Yoghurt, Berry mix and Crunchy Oat Granola.
Yummy again! At least for my taste....
Salsa, Guacamole and Tortilla Chips
This is not mine! We dont usually buy chips, but when we do we buy lentil chips, rice chips or these tortillas.
My husband likes them with salsa or guacamole.
Also, this is better when we add cheddar and jalapenos and put it in the oven.
Peanut Butter Cookies
The recipe was good. They are delicious! Is just that I baked these the same day I baked another recipe, the Oatmeal, Raisins and Walnuts Biscuit recipe coming from .
Hers are way better! However, this recipe is not to throw to the garbage, especially if you love peanut butter. I'll come back with the recipe, promise! If you really want this until I post the recipe, leave a comment down bellow and I happily will share it with you! 😊
Rosemary Potatoes, Chicken breast and Mushroom Sauce
This is something delicious to serve at dinner or lunch..
I am in love with oven baked potatoes. If there's rosemary, oregano or thyme, then its even better!!
For the potatoes you need this; herbs, olive oil, water, salt and pepper.
In a tray, add all ingredients mentioned above. You need a bit of water to have moist potatoes, crispy outside and hearty inside.
For the mushroom sauce:
Saute onion, add thyme, salt and pepper, mushrooms. Saute until mushrooms are well done and then add heavy cream. Simmer until you have a nice sauce texture.
As you can see in the photos, Caleb helped with cutting the mushrooms. My heart 💛
Grill the chicken breast!
Its heavenly delicious!
Oatmeal Raisins Cookies
This is a recipe shared by . In case you missed it, I'm telling you, go on her blog and find it! I did it already two times in a week.
These are golden and crisp on the outside , but hearty on the inside.
They are delicious, really worth trying! They're perfect with a cup of tea!

Fries, Cordon bleu and Salad
Well, this is another recipe I'm not really proud of!
Because???? Because the cordon bleu its not made by me. It is the ONLY semiprepared food I'm buying ocasionally. That would be twice a year, let's say.
For the salad I had a mix of salads, red bell pepper, red onion, cucumber, tomato and feta cheese. Drizzle a bit of olive oil, salt and pepper.
Leftover Cordon bleu and Avocado Salad
Thats another cordon bleu invention. It was actually mine. Had it the day after having the dish abode.
Fresh green salad, cherry tomatoes, olives, avocado, feta cheese and the cordon bleu.
Nothing fancy, ready in 10 minutes!
Berry Smoothie
This was for Caleb and me.
It has coconut milk, orange, banana, billberries. That's all.
In one word, delicious! I added in mine some ashwaganda powder as well.

Cheese Pastry
Ohh this was another improvisation!! I think its my second time trying to do something like this and for sure I wouldt bake these if it wasnt for that pastry I had in the fridge because of Caleb!
Yup, my 4 years old baby boy! He has a book with healthy recipes for kids and he said to try one recipe that asked for filo pastry, spinach and whatever.
By the time I bought all the ingredients, he didnt want to try it anymore! He said another day, another time! Days have passed and I had in the fridge this pastry.
I DON'T KNOW HOW TO BAKE THIS! I don't bake stuff with bought pastry or whatever.
But I said what the heck? It couldnt be so hard, right?! So I put this pastry on a baking paper and stuffed it with a mix of cream cheese and feta cheese.
One of these three was sweet. I added soft cheese, cream cheese, vanilla powder and sugar!
The sweet pastry was amazing! The other one...was OK.
So what do you say, folks?
