Hey Hive!
We're back with more of our home cooking! If you're unfamiliar with this series, it's where I showcase some of the recipes we've been trying at home since we've been cooking a lot nowadays! Also I'm running out of content so yeah gotta make the most of it!
So if you didn't know, I've been streaming on Twitch.tv for quite a while now (at this point it's been more than a year!) and to celebrate 1800 followers, my chat suggested I do another cooking stream and it was super fun! One of my VIPs suggested that I cook chicken katsu and since my sister-in-law gifted us a couple of packets of curry, I decided to try it out!
I followed this chicken katsu recipe by RasaMalaysia that I looked up prior to this since I've never made chicken katsu before, and it seemed pretty simple! The recipe also gives instructions for how to make homemade katsu sauce but since we were making curry it wasn't necessary.
These were the ingredients I used:
- 2 chicken breasts
- salt
- black pepper
- 2 eggs
- curry sauce
- panko breadcrumbs
- canola oil
- 2 cups of rice
- carrot
- frozen vegetables
These were the instructions which sounded quite easy.
My sister-in-law bought us 2 packets of curry from MUJI and they were different flavours! The one we decided to try out today was Onion & Pork Curry that looked like this:
Since I was streaming the whole time; I was busy preparing the food and talking to my chat so Sean took most of the pictures.
Here's the entire livestream of the cooking process if you're interested!
I cut the vegetables and washed the rice and dumped them all in the rice cooker to cook while we prepared the chicken.
I also defrosted the chicken breasts the night before in my fridge so the next step would be to wash them.
Step 1: wash the chicken breasts and pat dry with paper towels.
Step 2: if your chicken breasts were quite thick like mine, I suggest pounding them a little bit to make it thinner and ensure even cooking. We didn't have a tenderiser/mallet so we used a frying pan to flatten it a little bit.
Step 3: Season the chicken breasts with salt and pepper on both sides
Step 4: beat the eggs in a bowl
Step 5: heat up a pot/wok with oil on medium heat then it was time to bread the chicken! Dip the chicken in the egg and immediately coating it in the panko. Dip the chicken again in the egg and then coat in panko another time. Make sure the chicken is evenly coated in panko as best as you can.
It was kinda messy but I tried my best.
Step 6: slowly slide the chicken into the pan and deep fry until both sides are golden brown. Make sure the heat is not too high such that the panko gets burnt before the chicken is cooked.
Our chicken breasts were still pretty thick despite using the pan to pound it so I made sure to alternate the heat and cook it for a little longer on lower heat. Our induction cooker is quite rigid in terms of temperature setting though so it was hard to maintain it at a suitable temperature.
While I was monitoring the chicken, Sean went to microwave the curry and it smelled pretty good!
After about 10-15 minutes, our chicken was ready! They were pretty oily but I drained it the best I could.
Then it was time to sit down and eat! Our plates looked soo good! We were also streaming us eating the food of course, so it turned into a kinda mukbang stream! It was cool though, just eating and chatting with my viewers.
Here's a closeup of our food! The curry was actually pretty good! It tasted probably as good as any other instant curry I've tried and probably not that different from other Japanese curries.
And the chicken katsu was soo delicious too! I'm just glad the chicken was cooked all the way and it wasn't dry either. The breading was also really yummy and it wasn't oily at all!
The chicken katsu was quite dense though; the plates were quite heavy and it took some effort to cut through it.
But it was indeed cooked inside so it was all good! It was still pretty thick though but it tasted soo goood!
We took our time to enjoy the food and then had ice cream for dessert after! It was a very chill and relaxing stream and I'm glad chat enjoyed it too since it was a celebration! We all had fun eating and chatting and we even gave a brief house tour after that!
Overall, this was a pretty simple recipe so if you've never tried it before I highly recommend it! The chicken katsu itself doesn't require much ingredients and you can just buy katsu sauce from the Asian supermarkets so definitely give it a try!
I stream almost daily on Twitch, playing a bunch of different games with chat and you're welcome to come chill and hangout with us!
Thanks so much for reading!
