Hello everyone,
How are you feeling today? I had a really messed up cold in the last few weeks, which is why I'm going to skip this week's food collection post. I'm sorry about that, it's just that I didnt cook much and also I had a lot of things going on! Promise I'm going to make up for it next week!
Instead, I thought to share with you this Applebread Recipe I did together with my 4 years old.
Why investing your time cooking with kids?
Well, let's just see a few reasons why you should start having this habit (if time allows it):
- It helps kids build basic things. And this happening only by counting eggs, pouring water or using the measuring cups.
- Bonding time. This is one of the most important benefits coming from cooking with your child. Bonding, memories and relationship with your kids is such a precious thing! ๐
- It makes kids more aware of their health and the foods around them. All the smeels, the colors, the textures, the food ingredients are there and children can explore them, asking questions, testing foods. It's a good start to introduce health topic discussions and teach them how important is healthy food.
Ingredients:
- 4 cups any apples I used Granny Smith because we have a big one in the garden.
- 2 large eggs
- 1 cup applesauce
- 1/2 cup maple syrup or honey
- 2 Tbsp oil
- 1 tsp vanilla extract (optional)
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 and 1/4 cups whole wheat or spelt flour
This recipe is not my own, as it's understandable. With so many recipes available these days , it's more easier to pick one and try it than creating your own.
So here's the original recipe. I wanted to try this one because it looks so good with those big chuncks of apples and also because the process is quite easy, just perfect when cooking with kids.
Trust me, you don't want recipes with lots of instructions when kids are involved. ๐
So here we gooooooooo! ๐ (well, not that fast as a rocket cause you know...kids. They make things a "bit" slower) ๐คฃ๐คฃ
Preheat oven to 350 degrees F and spray loaf pan with cooking spray. Set aside. All right, moving on.
First step is to cut apples in small pieces.
In a large mixing bowl, whisk the eggs for 10 seconds.
Caleb helped cracking the eggs and with beating too.
Add applesauce, honey, oil, vanilla extract, cinnamon, nutmeg, baking powder, baking soda, salt and whisk until well combined.
I used extra virgin olive oil, but it's up to you to use your favorite. We measured the ingredients carefully. This is always Caleb's favorite part!
Add spelt or whole wheat flour and stir gently just enough to combine. Be careful not to over mix. Add apples and give a few more gentle stirs to combine.
Pour batter into prepared loaf pan and level gently with spatula. Bake for 60-70 minutes our until the toothpick inserted in the middle comes out clean.
Remove from the oven and let cool for 10 minutes. Then transfer to a cooling rack to cool off almost completely.
Note: I didnt keep mine for so long. I think 50 minutes is enough or maybe a bit to much haha.
This was done so easily! We love to have an apple bread or a banana bread in the house. All three of us are big tea lovers so these work amazing with one cup of tea! I hope you'll like the recipe.
For us, this is a recipe to keep. I love the simplicity of the recipe, the big pieces of apples and of course the flavor. I added more cinnamon than it was indicated in the recipe, as I always do! ๐
Thank you everyone for reading!
Enjoy your day and stay healthy!
