Eating dishes prepared the usual way must get boring, right? Well, today there’s a new way to make special fried chicken at home.
Not many people know that chicken fried with spices and a touch of shrimp paste can taste this good. Well, of course, I found the recipe on social media a long time ago. I was very curious about the results and decided to try it at home right away. Since I had all the ingredients and some chicken on hand, I went for it. This dish sounded intriguing, but I was still a bit nervous because I’ve always struggled with fried chicken. The last time I tried making KFC-style breaded fried chicken, it failed, and I’ve barely attempted it since.
Today I’m trying to make shrimp paste fried chicken that’s crispy on the outside and tender on the inside, cooked to perfection. Curious about the recipe? Let’s take a look at the step-by-step preparation.
500 grams chicken
¼ lime
1 tablespoon salt
2 tablespoons all-purpose flour
1 tablespoon cornstarch
1 egg
5 red chili peppers
3 shallots
3 garlic cloves
1 small packet of shrimp paste
4 kaffir lime leaves
Marinate the chicken with salt and lime juice, then blend the eggs, onions, and chili peppers until smooth with a little water.
Once smooth, mix the seasoning into the chicken marinade and stir until evenly combined.
Add both types of flour and stir until evenly combined. Add water to the remaining seasoning in the blender, then pour it over the chicken.
Let it marinate for about 30 minutes; don’t forget to add finely chopped kaffir lime leaves.
Once marinated, fry in plenty of oil over low heat until golden brown.
I usually enjoy fried chicken with a simple spicy shrimp paste chili sauce; I’ll make just a small amount so it’s enough for one serving.
4 cloves of red onion
2 cloves of garlic
7 bird’s eye chilies
3 to 4 cm of shrimp paste
Salt and sugar to taste
3 kaffir lime leaves
Fry all ingredients except the kaffir lime leaves, sugar, and salt until wilted.
Then, once cooled, blend until smooth and cook with a little oil.
Cook until the liquid has reduced, then add the kaffir lime leaves and season with salt and sugar.
Now, serve both on a serving plate and take a look at the mouthwatering final result. Although it’s not perfect, it’s already incredibly delicious—I’m so happy with the rich, fragrant aroma. The combination of shrimp paste and kaffir lime leaves makes this a dish you simply must try.
It’s spicy, savory, and has a crispy texture on the outside with a juicy interior. I was a bit worried it might not be cooked through, but using low heat really helped ensure everything was perfectly cooked. Even though it requires a lot of patience to cook. But if the result is this delicious, I’ll definitely make it again.
