I'm here again with my weekly food post sharing with you some recipes we had last week. Actually I skipped last week writing the food collection post because I was having such a bad cold, it lasted for weeks. But I'm happy we finally got over it and we're in good shape (and mood 😁) again! 💜

Our food this week. Week 8 🍛
Shrimp Baby Carrots and Rice
Well, this is a classic in our home. I started cooking this meal long time ago, mostly with salmon. But we love both salmon and shrimp.
For the rice, there's no need for cooking instruction. Measure your rice an water 1/1.5 ratio, add salt, pepper and cardamom seeds. Bring to a boil, let it cover for 10 minutes when boiling and then make sure to not remove the lid. Not just yet. Let it rest for 10 minutes. You'll have a fluffy , NO mushy, perfect rice!
For the glazed carrots recipe, you'll need butter or olive oil, honey, salt and pepper, thyme and baby carrots ofc.
Add oil/butter to a pan, add carrots and condiments. Let it simmer (with a little water) for as long as it needs (depends on your stove/gas/induction cooking hob). When it's completely done add a bit of honey.
Shrimp recipe: garlic, salt and pepper, butter, shrimp. Add butter, garlic and shrimp to a pan. Let them cook on both sides for a few minutes (2-4 minutes on one side), then remove the garlic. Add salt and pepper. Thats in!

Best Lentil Cream Soup in the world
Hmmm! HOW I LOVE THIS! But I already saved a draft with the recipe, coming soon next week!
So hold on, I promise this is so so good and delicious for a cream soup!
I'm only telling you this: it has a lot of spices like fennel, basil and mint! It's really an explosion of flavors!
Oats and Quinoa Cacao Porridge
This is the same as oatmel, but in addition to that, it has a little bit of quinoa flakes. In a pan,add quinoa flakes and oats. Add milk as well. I had oat milk. Let it boil until its done. Add cacao powder, honey and enjoy!
You can have some apples with it or banana slices! Yummy!
Honey Caramelized Nuts
It's been some time since I last have this goodie! Yum yum yum! I had a mix of nuts (almonds and walnuts). The package was unopened and they were near the expiration date! 😱 So lets do something with them!
I put the nuts in a pan on medium heat. I tried to roast them for a couple of minutes, stirring ocasionally to not get burned! You can make these in the oven but the pan method is much faster.
In the end, add honey (or brown sugar) and cinnamon.
Mix everything. These harden within about 20-30 minutes but let them cool for about 2 hours.
Freakin' DELICIOUS!!!
No fancy Breakfast
This is a regular breakfast in so many parts of the world. Scrambled eggs with veggies (Avocado, green onions, cucumber), toast and yoghurt, salami and smoked beef slices.
Grilled Pesto Sandwichies
I forgot to take a picture to the final result! Hahaha. They are soooo sooooo delicious I devoured them instantly!!!
But I remembered I have an old post about it. Take a look to see how they look when they're grilled.
You'll find the recipe there as well, but meanwhile here are the ingredients: mozzarella or feta cheese, pesto, basil, tomatoes, dried oregano.
Vegan (or non vegan) Tortilla Sandwichies
I served these vegan, my husband served them with homemade smoked bacon.
There is guacamole, meaning avocado, garlic, onion, olive oil, lemon juice, salt amnd pepper.
Veggies: green bell pepper, cucumber, tomato slices, pumpkin seeds and vegan dressing sauce. A sort of caju cream.
I grilled the tortillas in a pan for 2 minutes to have a crispy tortilla sandwich.
Mushrooms and Salmon
This was for my son! He adores both salmon and mushrooms. But not all types of mushroom. He mostly loves Champignon or cremini mushrooms, cooked in a pan with a little bit of butter, salt and pepper.
Sometimes I add thyme, but its not really his favorite.
Salmon is also pan fried, in olive oil. Add spices on top. Classic. :D No time consuming dinner!
Toddler/Preschool Food Plate
This is another one for the little one. He doesnt like food tobe mushy or to many ingredients all in one.
He really really loves seeing them like this, in big chuncks, chosing them separately.
He had here Kalamata olives, Avocado, Grilled Bread, Cherry tomatoes topped with basil olive oil, grilled beef and yoghurt. He ate everything!
Oven Baked Bacon Sweet Potato and Salad
This is another food stample in my kitchen. Booiled and then oven baked potatoes (yellow ones or sweet potatoes) with bacon and a salad on the side.
First, I boil the potatos just to make the whole process faster. If I oven bake them from the start, cooking time will be longer. I sometimes do that but I prefer boiling them first. When they're ready, cut it in half and add bacon.
I (almost) always add mozzarella cheese as well.
Serve them with a salad. I only had rucola. But its my favorite so...no problem for me.
Red Cabbage and Veggies Salad
Just a simple salad with all kind of veggies: red cabagge stripes, carrot slices, green salad, avocado, fresh green dill and spices.
Italian Style Appetizers
Now this is one of my favorites food to have once in a while!
But whats the most important thing with this is to have fresh food products, starting with the bread!
OMG! I adore this! Yup, they way I sound, I'm a food addicted.
So yeah, everything must be fresh. Soft bread, avocado slices, Italian Salami, Gorgonzola Cheese, Olives and Cherry tomatoes!
You can serve them anytime.
Sweet Potato and Beans
I made this for Caleb. He really likes red beans and this type of recipe, having them together with sweet potato or tomato sauce.
This time I cooked them without tomato sauce or a few cherry tomatoes (or 1 big onion).
You need olive oil, onion, sweet potato, red beans.
Add olive oil and saute the onions. Add sweet potato and let simmer for 15 minutes. Add canned red beans, salt and pepper, paprika and mix well. Let them simmer for about 5 more minutes.
Thats it. :D
Bacon & Egg Omelette and Pink Radish slices
Spring is here, and that means pink radishes are here too! Love them! So fresh and cruncy!
I love bacon omelette and radishes. This was actually for me.
