I made a delicious lunch that was pretty easy to prepare, though I must admit that it’s the ingredients that give it that warm, home-cooked flavor—it’s wonderful to cook with onions, tomatoes, garlic, carrots, and bell peppers; everything will turn out delicious if you use these ingredients.

Beef with vegetables is delicious, and I served it with raw zucchini. It’s a complete and healthy meal, and we can always make some kind of variation—adding ingredients like potatoes or broccoli also works perfectly.

INGREDIENTS - Beef for stewing, cut: steak - Coarse salt, oregano, bay leaf, pepper, and oil - Chopped carrots - Chopped tomatoes - Chopped onions - Minced garlic - Chicken stock (chicken) - Zucchini - Simple dressing for the zucchini - Cilantro leaves PROCEDURE

In a large pot, season the beef with: salt, oregano, pepper, and add achiote to give it a nice color.

I cooked the meat in its own juices with the pot covered; this took about twenty minutes.

Then I added: carrots, bell pepper, onion, garlic, bay leaf, and tomato; stir everything well and cook for five minutes.

Add the chicken stock and cook over medium-low heat for one hour, or until the meat is tender.

Once the meat is ready, adjust the salt and pepper, then you can add chopped fresh herbs; this time I added cilantro leaves. ZUCCHINI AS A SIDE DISH

I love seasoned raw zucchini. The trick is to slice the zucchini into thin strips; using a mandoline or potato peeler really helps.

Then cut them into thin strips, as you can see in the picture. Finally, add a dressing—a simple one works well. This dressing includes olive oil, salt, lemon, and cilantro.

Bistec de Carne de Res al cilantro, con Calabacín

Hice un almuerzo delicioso y bastante sencillo de preparar, aunque debo admitir que los ingredientes serían los que aportan ese sabor hogareño y cálido, es estupendo cocinar con cebolla, tomate, ajo, zanahoria y pimiento; todo quedará delicioso si utilizas éstos ingredientes.

La carne con vegetales es deliciosa, y la acompañe con calabacín crudo, es una comida completa y saludable, siempre le podemos hacer algún tipo de variación, añadir ingredientes como papas o brócoli también le queda perfecto.

INGREDIENTES - Carne de res para guisar, tipo de corte: bistec - Sal gruesa, orégano, laurel, pimienta y aceite - Zanahoria picada - Tomate picado - Cebolla picada - Ajo picado - Fondo de ave (pollo) - Calabacín - Aderezo sencillo para el calabacín - Hojas de cilantro PROCEDIMIENTO

En una olla espaciosa sazone la carne con: sal, orégano, pimienta y añadí aceite onotado para que tenga un color agradable.

Cociné la carne en sus propios jugos con la olla tapada, ésto duró unos veinte minutos aproximadamente.

Luego agregué: zanahoria, pimiento, cebolla, ajo, laurel y tomate; mover muy bien todo y cocinar por cinco minutos.

Añadir el fondo de ave y cocinar a fuego medio lento por una hora, o hasta que la carne esté tierna.

Una vez que la carne esté lista, hacemos la corrección de sal y pimienta, luego le podemos colocar hierbas frescas picadas, en esta ocasión yo le añadí hojas de cilantro. CALABACÍN PARA ACOMPAÑAR

El calabacín crudo sazonado me encanta, la técnica es rebanar el calabacín en lonjas delgadas, utilizar una mandolina o pelador de papas ayuda mucho.

Luego cortamos en finas tiras, así como pueden apreciar en la imagen, por último le añadimos aderezo, uno sencillo le va bien, éste aderezo tiene aceite de oliva, sal, limón y cilantro.
