quien ha sido muy gentil, al compartir con todos nosotros la receta de mondongo ¡dulce! que su abuela le enseñó, y la recuerda del siguiente modo: “…me viene a memoria cuando le decía a mi hermano menor: muchacho el que no coma mondongo con azúcar no ha comido mondongo, siempre nos reíamos por eso y hasta el momento mi hermano come mondongo sin azúcar, no sabe de lo que se pierde.”. Para ser franca me sorprendió mucho saber que hay una versión dulce del mondongo, y más aún que le añadan plátano maduro. Este plato es muy laborioso, y quizás es una de las sopas tradicionales más extendidas en toda Venezuela. Tengo que probar esta receta.

Voy a confesar algo: No soy de comer muchas patas de pollo, porque siempre las asocio con enfermedad, ya que es un hecho ampliamente comprobado que son una bomba de vitaminas y minerales que ayudan a recuperar la salud perdida, de allí que siempre se consuman como un medicamento o como regenerador; pero creo que esta receta que nos trae , me ha hecho reconsiderar a este alimento; y es que su “Sopa de pollo con patas, sopa que sana”, me ha parecido tan sabrosa, que voy a probar su receta. Me ha encantado su generosidad, al compartir varios tips secretos para que la sopa quede aún más deliciosa, por ejemplo: Sofreír las patas de pollo antes de echarlas al caldo para resaltar su sabor, o añadir la raíz del cilantro muy limpia, bien lavada y machacada para darle un toque secreto, eso ¡me encantó! Ella recuerda esa sopa de su niñez, con estas palabras: “Como olvidar esa sopita de pollo con sus patas que preparaba mamá cuando estaba niña y me daba asma era indispensable para recuperarme, así que seguí los pasos de la preparación de mi madre junto con unos secretos míos para elaborarla y seguir esa tradición familiar de sanar a mi príncipe con una rica sopita de pollo tal como lo hacía mi mami conmigo.” ¡Son bellas palabras! Mi madre solía preparar muchos consomés, siempre decía que eran buenos para la salud y el cerebro; y yo supongo que eso mismo pensaba la mamá de , porque al igual que mi madre, utilizaba el corte conocido como chocozuela, que corresponde a la parte trasera de la vaca, y es una pieza limpia, sin venas, para elaborar un hervido de res; y es que este corte da un caldo profundo, que sin duda al tomarlo reconforta y abriga al alma. Me ha parecido muy hermoso que
nos hable de su mamá, quien es de nacionalidad colombiana y quien con trabajo y esfuerzo logró regentar su propio restaurant; y ella, haciendo honor a lo que aprendió de pequeña, nos trae esta receta que no es consomé, ni una sopa, sino un hervido, un cruzado de res, o sea, que usa dos cortes distintos para elaborarlo, siendo el otro las costillas. Ella recuerda cómo aprendió a cocinar de la mano de su mamá cuando dice: Les cuento que ella me enseñó a cocinar cuando yo tenía 9 años ya que la cocina y cocinar siempre me ha gustado, y yo aprendí a cocinar fue haciendo sopas, recuerdo que mi primera sopa fue de alitas de pollo, y le colocaba queso en cuadritos y me quedo buenísima.

A veces hay comidas que nunca nos han gustado y de pronto es como un descubrimiento y nos encantan, y tal cual le ocurrió a con este plato, ya que aunque en su niñez no le gustaban las sopas, ahora, ya de grande, le fascinan; por eso nos comparte la receta SOPA DE COSTILLAS DE RES CON TRADICIÓN FAMILIAR, acompañada de picante, limón y aguacate (este último acompañante también me sorprendió), y nos cuenta del modo siguiente por qué su mamá hacía constantemente sopa: ”En esta oportunidad hice una deliciosa sopa de costillas de res, en casa mi papá es fanático a esta sopa, desde muy pequeña recuerdo que le pedía a mi mamá todas las semanas hacer sopa de costillas de res. Les confieso que a mí no me gustaba y siempre comía otra comida. Pero desde hace un tiempo para acá se ha convertido en una de mis favoritas al igual que la sopa de pescado que es mi favorita..
